2-Ingredient Vegan Pumpkin Gnocchi

Ingredients

  • 2 cups pumpkin puree
  • 3 cups oat flour

Optional seasonings

  • pepper
  • salt
  • or other spices

Preparation

  1. Mix the pumpkin puree with the oat flour and add optional herbs if desired.

  2. Ensure the dough is easy to knead and add more flour if necessary.

  3. Divide the dough into 8 pieces and roll each into long strands about 1-2 cm thick.

  4. Cut the strands into pieces and flatten them slightly with a fork.

  5. Bring water to a boil in a pan and cook the gnocchi for 4 minutes or until they float to the top.

  6. Fry them briefly in a skillet and serve.
