Baked Sweet Potato Fries with Dipping Sauces
Ingredients
- Sweet potatoes
- Avocado oil (small amount)
- Thyme
- Rosemary
- Sea salt
- Pepper
Cashew curry dipping sauce
- 1/2 cup soaked cashews
- 1/2 to 1 cup filtered water
- 1/2 teaspoon sea salt
- 1 tablespoon curry powder
- 2 dates
- Dash of cayenne
- 1 garlic clove
Maple tahini dipping sauce
- 1/4 cup raw tahini
- 1/2 to 1 cup filtered water
- 2 tablespoons maple syrup
- Sea salt to taste
- 1 clove garlic
- 1 tablespoon lemon juice
- Sprinkle of smoked paprika
Preparation
Wash and cut sweet potatoes into fries, rinse and pat dry.
Toss in a small amount of avocado oil, thyme, rosemary, sea salt, and pepper if desired.
Bake on parchment paper at 400 degrees for 25 minutes, flip, and bake for another 15 to 20 minutes.
Serve with the dipping sauces.
Dipping sauces
For Cashew Curry Dipping Sauce, blend all ingredients until smooth.
For Maple Tahini Dipping Sauce, whisk or blend all ingredients until well combined.
