Banana Blueberry Bread
Ingredients
- 2 flax eggs (1 tbsp of chia/flax meal with 8 tablespoons of water)
- 1 cup coconut sugar or granulated sugar
- 3/4 cup mashed banana (about 1 1/2 large bananas)
- 1/2 cup coconut oil, melted
- 1/2 cup plus 1 tablespoon of plant-based milk
- 2 cups all-purpose flour
- 2 tsp baking soda
- 1 tbsp QI protein powder by @animamundiherbals
- A dash of salt
- 3/4 cup of wild blueberries (tossed with 1 tablespoon of flour)
Preparation
Preheat your oven to 350F, prepare 3 mini loaf pans/1 big one.
Add all wet ingredients and mix well.
Add dry ingredients and stir until just combined.
Fold in blueberries carefully.
Bake for 75 min for a big loaf pan.
