Banana Blueberry Bread

Ingredients

  • 2 flax eggs (1 tbsp of chia/flax meal with 8 tablespoons of water)
  • 1 cup coconut sugar or granulated sugar
  • 3/4 cup mashed banana (about 1 1/2 large bananas)
  • 1/2 cup coconut oil, melted
  • 1/2 cup plus 1 tablespoon of plant-based milk
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tbsp QI protein powder by @animamundiherbals
  • A dash of salt
  • 3/4 cup of wild blueberries (tossed with 1 tablespoon of flour)

Preparation

  1. Preheat your oven to 350F, prepare 3 mini loaf pans/1 big one.

  2. Add all wet ingredients and mix well.

  3. Add dry ingredients and stir until just combined.

  4. Fold in blueberries carefully.

  5. Bake for 75 min for a big loaf pan.
