Black Bean and Sweet Potato Quesadillas

Ingredients

  • 1 15 ounce can black beans
  • 1 1/2 cups cooked mashed sweet potato
  • 1/2 onion, diced
  • 1/3 cup tomatoes, diced
  • 1 bell pepper, diced
  • 2 tbsp taco seasoning of choice (I use @siete mild seasoning)
  • Olive oil
  • 6 tortillas of choice

Toppings

  • Salsa
  • Sour cream
  • Avocado

Preparation

  1. To cook the sweet potato in the quickest way, pierce and microwave for 5 minutes. You can also bake it at 400F for 30-40 minutes but to keep this recipe quick, I microwave!

  2. While the sweet potato cooks, heat a skillet over medium heat.

  3. Add olive oil + diced onion + bell pepper + tomatoes

  4. Sauté for 5 minutes

  5. In a bowl, combine sweet potatoes + black beans + cooked veggies + taco seasoning

  6. Add back to the skillet and sauté another 5 minutes

  7. Add to a tortilla

  8. Press together

  9. Add back to the skillet. I add a pan on top to really press these down since they don’t have cheese to help hold them together. Cook for a couple minutes until tortilla is crispy!

Tips

  1. To save time, use two skillets if you have smaller ones to cook everything at the same time!
