Black Bean and Sweet Potato Quesadillas
Ingredients
- 1 15 ounce can black beans
- 1 1/2 cups cooked mashed sweet potato
- 1/2 onion, diced
- 1/3 cup tomatoes, diced
- 1 bell pepper, diced
- 2 tbsp taco seasoning of choice (I use @siete mild seasoning)
- Olive oil
- 6 tortillas of choice
Toppings
- Salsa
- Sour cream
- Avocado
Preparation
To cook the sweet potato in the quickest way, pierce and microwave for 5 minutes. You can also bake it at 400F for 30-40 minutes but to keep this recipe quick, I microwave!
While the sweet potato cooks, heat a skillet over medium heat.
Add olive oil + diced onion + bell pepper + tomatoes
Sauté for 5 minutes
In a bowl, combine sweet potatoes + black beans + cooked veggies + taco seasoning
Add back to the skillet and sauté another 5 minutes
Add to a tortilla
Press together
Add back to the skillet. I add a pan on top to really press these down since they don’t have cheese to help hold them together. Cook for a couple minutes until tortilla is crispy!
Tips
To save time, use two skillets if you have smaller ones to cook everything at the same time!
