Cajun Chick’n Style Stew

Ingredients

  • 3 to 6 tablespoons vegetable oil
  • 1 bag of soya chick strips or this is not chicken
  • 2 1/2 teaspoons salt
  • 1/2 cup all-purpose flour
  • 2 medium onions, chopped
  • 2 cloves garlic crushed
  • 1 medium green pepper, chopped
  • 1 red pepper chopped
  • 1 celery stick chopped
  • 3 cups water
  • 1 heaped teaspoon cajun seasoning
  • 1/4 teaspoon cayenne, or to taste
  • 3/4 cup thinly sliced spring onions (scallion) greens
  • salt & pepper
  • 1/2 cup vegetable stock
  • cooked white rice

Preparation

  1. Cook vegan chicken substitute in deep pan or wok, set aside in a bowl

  2. In the wok Cook all vegetables like a stir fry in half the oil, add Cajun spices & cayenne pepper to taste

  3. Make a roux in a separate non stick pan with the remaining oil & flour (or add vegan butter if preferred) cook the roux till it browns (but not burnt) add stock to the roux and incorporate this thick sauce into the pan of veg, add extra stock if too thick

  4. Bring to simmering point and add back in the chick’n

  5. Cook on a low simmer a further five mins

  6. Add spring onion greens in the last two minutes

  7. Then serve on rice
