Chickpea Chive Pancakes
Ingredients
- 1 cup chickpea flour (if not a fan of chickpea flour feel free to use white flour)
- 1/2 tsp baking powder
- 2 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp ginger powder
- 1/4 tsp Chinese five spice
- 2/3 cup soy milk
- 1 tbsp soy sauce
- 1 bunch Chinese chives or scallions
Preparation
In a small bowl, add all dry ingredients
Add in chives and with a fork, mix with dry mixture
Slowly add in soy milk and soy sauce and with fork mix all ingredients until chives are coated with the thick batter
Take fork and portion a small forkful of the chive batter onto a hot griddle
Spread batter with fork and allow to cook for about 4 minutes until bottom is browned
With a spatula flip pancake
Use spatula to flatten pancake as much as possible
Cook for an additional 4-5 minutes, flattening with spatula to make sure batter is fully cooked and slightly crispy
Remove from heat and serve
