Chickpea Chive Pancakes

Ingredients

  • 1 cup chickpea flour (if not a fan of chickpea flour feel free to use white flour)
  • 1/2 tsp baking powder
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ginger powder
  • 1/4 tsp Chinese five spice
  • 2/3 cup soy milk
  • 1 tbsp soy sauce
  • 1 bunch Chinese chives or scallions

Preparation

  1. In a small bowl, add all dry ingredients

  2. Add in chives and with a fork, mix with dry mixture

  3. Slowly add in soy milk and soy sauce and with fork mix all ingredients until chives are coated with the thick batter

  4. Take fork and portion a small forkful of the chive batter onto a hot griddle

  5. Spread batter with fork and allow to cook for about 4 minutes until bottom is browned

  6. With a spatula flip pancake

  7. Use spatula to flatten pancake as much as possible

  8. Cook for an additional 4-5 minutes, flattening with spatula to make sure batter is fully cooked and slightly crispy

  9. Remove from heat and serve
