Chinese Green Bean and Tofu Mince
Ingredients
- 1 block silken tofu
- 2 cups green beans
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce
- 1/2 teaspoon chili powder
- 1 teaspoon cornstarch
- 1 tablespoon oil
- 2 cloves garlic, minced
- 1/2 inch ginger, minced
- 1 teaspoon sesame oil
- 1/4 cup water
- Salt and pepper, to taste
Preparation
Mix the soy sauce, sweet soy sauce, sesame oil, and chili powder together until well combined.
Heat the oil in a pan, then sauté the garlic and ginger until fragrant.
Add the crushed tofu and stir well.
Add the green beans, stir briefly, then add water and cook until the green beans are half-cooked.
Add the sauce mixture and stir well.
Add the cornstarch dissolved in water and cook until the sauce thickens.
Taste and adjust seasoning with salt or sugar if needed.
Remove from heat and serve with warm rice.

This dish can be prepared in under 30 minutes and is a healthy vegetarian alternative to the traditional version with ground meat.
