Creamy One-Pot Cheesy Broccoli Pasta Soup

Ingredients

  • 1 small chopped onion
  • 2 minced garlic cloves
  • 1/2 teaspoon mustard powder
  • 2 cups small broccoli florets
  • 2 tablespoons all-purpose flour or gluten-free alternative
  • 3 cups vegetable broth
  • 1 tablespoon tamari or soy sauce
  • 3 tablespoons nutritional yeast
  • 2 cups dry pasta
  • Salt to taste
  • Oil or vegetable broth for sautéing (optional)

Preparation

  1. Sauté the chopped onion in a little oil or broth until translucent, about 5 minutes.

  2. Add minced garlic cloves and mustard powder and cook for another 30 seconds.

  3. Add broccoli florets, mix, and cook for another minute.

  4. Add all-purpose flour and mix well to coat the broccoli while cooking.

  5. Once flour is incorporated, add vegetable broth, tamari or soy sauce, and nutritional yeast and stir to incorporate.

  6. Mix well to prevent flour from getting lumpy.

  7. Add dry pasta.

  8. Bring to a gentle boil while stirring.

  9. Cover and cook on low heat, stirring regularly to prevent sticking and adding more broth as needed, until pasta is al dente.

  10. Season with salt to taste.

Notes

  1. This recipe can be made oil-free by using broth for sautéing.

  2. Additional vegetable broth may be needed; about 1 cup was used in the example.
