Crispy Air-Fried Potato Smiles

Ingredients

  • 1.2kg white potatoes
  • 6 tbsp fine semolina
  • 1 tsp smokey paprika
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp olive oil or fry light spray

Preparation

  1. Peel and chop the potatoes into quarters and place them in a saucepan with hot water. Boil until fork tender.

  2. Drain the potatoes and add to a bowl with semolina, seasonings, and a bit of oil. Mash until smooth.

  3. Take a tablespoon of the potato mash and flatten it into a cookie cutter. Remove the cookie cutter and flip the potato circle. Poke two holes with a straw to form the eyes. Use the side of a tablespoon to carefully move from left to right to form the smile.

  4. Place the potato smile on a plate and repeat the process with the remaining mash.

  5. Spray or brush the potato smiles with a bit of oil and add them to an air fryer. You may need to do this in batches depending on the size of your air fryer.

  6. Air fry the potato smiles at 190 degrees Celsius for 8 minutes, turning them halfway through.

  7. Serve with ketchup or your favorite condiment and enjoy.

Notes

  1. This recipe makes 22 potato smiles and is a healthier version using an air fryer with less oil.
