Easy Chickpea Stir Fry with Vegetables
Ingredients
- 1 clove garlic
- 1/2 medium white onion
- 100g mushrooms
- 1/2 medium zucchini
- 1 can chickpeas
- 2 tbsp tamari
- 1 tbsp rice vinegar
- Juice of 1/2 lemon
- Large handful spinach
Preparation
Add the garlic and the onion to a non-stick frying pan and cook for 2-3 minutes, until fragrant.
Add the mushroom and the zucchini, cooking for a further 2-3 minutes until the mushrooms soften.
Add the chickpeas together with the tamari, rice vinegar and lemon juice, stirring for around 2 minutes.
At the last minute, stir in the spinach and serve immediately with rice or noodles of your choice.
You can add any other vegetables you want or have on hand.
