Easy Chickpea Stir Fry with Vegetables

Ingredients

  • 1 clove garlic
  • 1/2 medium white onion
  • 100g mushrooms
  • 1/2 medium zucchini
  • 1 can chickpeas
  • 2 tbsp tamari
  • 1 tbsp rice vinegar
  • Juice of 1/2 lemon
  • Large handful spinach

Preparation

  1. Add the garlic and the onion to a non-stick frying pan and cook for 2-3 minutes, until fragrant.

  2. Add the mushroom and the zucchini, cooking for a further 2-3 minutes until the mushrooms soften.

  3. Add the chickpeas together with the tamari, rice vinegar and lemon juice, stirring for around 2 minutes.

  4. At the last minute, stir in the spinach and serve immediately with rice or noodles of your choice.

  5. You can add any other vegetables you want or have on hand.
