Glass Noodle Salad with Veggies

Ingredients

  • 220 g red cabbage, thinly sliced
  • 2 carrots, spiralized
  • 1 small yellow bell pepper, thinly sliced
  • 6 radishes, thinly sliced
  • 1 small leek, thinly sliced
  • 1 bunch coriander, chopped
  • 100 g black bean tempeh, cubed
  • 1 handful peanuts
  • 100 g glass noodles

Dressing

  • 100 ml fresh orange juice
  • 1 tablespoon lemon juice
  • 70 g peanut butter
  • 3 tablespoons tamari or soy sauce
  • 15-20 g fresh ginger, grated
  • 1 garlic clove, minced
  • 1/4 teaspoon cayenne pepper (optional)

Preparation

  1. Prepare glass noodles according to package instructions and vegetables as mentioned above, then add to a big bowl.

  2. Mix all ingredients for the dressing.

  3. Pour dressing into the bowl and mix with the salad ingredients until well combined. Add salt or more tamari to taste. Transfer to the fridge for one hour before serving.
