Indian Pav Bhaji Burger

Ingredients

  • 1/4 cup chopped onion
  • 1/2 cup chopped tomatoes or 1 Roma tomato
  • 3 medium russet potatoes, steamed and mashed
  • 1/4 cup mixed green and red bell pepper
  • 1/2 cup peas and carrots
  • 1 tablespoon chopped garlic
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon pav bhaji masala
  • 1/4 teaspoon turmeric
  • Salt to taste
  • 1 or more chilies

Garnishes and toppings

  • plant butter
  • garlic
  • cilantro
  • lemon juice
  • vegan cheese
  • spinach
  • tomato
  • caramelized onions

Preparation

  1. Crackle cumin seeds in a pan with some oil.

  2. Add garlic and onions, and cook for a minute.

  3. Add all the spices to allow them to bloom.

  4. Add tomatoes, bell peppers, peas and carrots, chillies, and salt, then cook until everything is cooked through.

  5. Add mashed potatoes and mix everything well.

  6. Add cilantro.

  7. On a griddle, toast the buns with butter, garlic, and cilantro.

  8. To assemble the burger, start with ketchup on the bottom bun, add spinach, cheese, the pav bhaji mixture, lemon juice, caramelized onions, and spread pav bhaji mayo on the top bun.

Tips

  1. For a cheesy sauce, melt some Daiya cheddar slices with a little plant milk to make a sauce.
