Kale Salad with Apple and Lemon Tahini Dressing

Ingredients

  • Lacinato kale
  • Apple
  • Pecans or walnuts
  • Parmesan cheese
  • Flaky sea salt
  • Black pepper

Lemon tahini dressing

  • Tahini
  • Water
  • Fresh lemon juice
  • Garlic
  • Honey
  • Kosher salt
  • Aleppo pepper or black pepper
  • Extra virgin olive oil

Preparation

  1. Thinly slice the lacinato kale

  2. Prepare the lemon tahini dressing by whisking together tahini, water, fresh lemon juice, minced garlic, honey, kosher salt, Aleppo pepper or black pepper, and extra virgin olive oil until smooth

  3. Chop the apple into bite-sized pieces

  4. Toast the pecans or walnuts in a dry skillet over medium heat until fragrant, if desired

  5. Combine the sliced kale, chopped apple, toasted nuts, and grated Parmesan cheese in a large bowl

  6. Add the prepared dressing and toss everything together to coat evenly

  7. Season with flaky sea salt and black pepper to taste

  8. Serve immediately or let sit for a few minutes to allow flavors to meld

Notes

  1. Lacinato kale is preferred over curly kale for its texture, and it's best when thinly sliced

  2. This salad is highly recommended but may not appeal to those who dislike kale
