Mashed Avocado and Tofu Scramble Toast
Ingredients
- 250 grams firm tofu, drained
- 1 tablespoon olive oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon mild paprika
- 1/2 teaspoon ground turmeric
- sea salt, to taste
- 4 slices of rye bread
Toppings
- 2 small avocados, mashed
- cherry tomatoes
- fresh coriander
- chia seeds
Preparation
Mash the tofu into chunks or grate it.
Heat olive oil in a frying pan over medium heat.
Add the tofu and spices, and mix to combine.
Cook for about 5 minutes or until the tofu is golden brown.
Toast the bread slices.
Spread mashed avocado on each slice.
Top with tofu scramble, cherry tomatoes, fresh coriander, and chia seeds.
Enjoy right away.
