Beetroot Hummus and Tofu Scramble Toast
Ingredients
Beetroot hummus
- 1 can chickpeas, drained
- 2 tablespoons tahini paste
- 1 clove garlic, minced
- 2 tablespoons lemon juice
- salt and pepper, to taste
- 2 tablespoons extra virgin olive oil
- 1 small cooked beetroot
Tofu scramble
- 200 grams firm tofu, drained
- 1 tablespoon olive oil
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon mild paprika
- 1/2 teaspoon ground turmeric
- sea salt, to taste
Assembly
- Rye sourdough bread
- Fresh coriander for garnish
Preparation
Beetroot hummus
Place chickpeas, tahini, garlic, lemon juice and beetroot into a food processor.
Process until smooth and creamy.
Adjust seasonings to taste.
Add oil and pulse again until mixture comes together.
Tofu scramble
In a frying pan heat olive oil over medium heat.
Add tofu and spices, mix to combine.
Cook for about 5 minutes or until the tofu is golden brown.
Assembly
Assemble your toasts, garnish with fresh coriander and enjoy right away.
