Matcha Latte Overnight Oats

Ingredients

  • 1/2 tsp matcha powder (I used @ippodoteausa)
  • 2 tbsp hot water
  • 1/2 cup gluten-free rolled oats
  • 1 tbsp chia seeds
  • 1 mashed Medjool date or 2 tsp maple syrup
  • 2/3 cup unsweetened almond milk or oat milk
  • 2 tbsp unsweetened vegan yogurt
  • Pinch of salt

Preparation

  1. Whisk together matcha and water until free of clumps.

  2. In a jar, combine oats, salt, and chia seeds. Whisk them together.

  3. Add the sweetener, yogurt, milk, and matcha mixture to the jar. Stir well until well combined.

  4. Wait for five minutes and give it another good stir.

  5. Seal the mixture and allow it to thicken overnight in the fridge.

  6. Before serving, give it a good mix and add a little more milk if desired.

  7. Top the oats with kiwi, pepitas, extra yogurt, and banana slices.
