Mixed Beans and Sun-Dried Tomato Couscous with Spinach Salad

- chopped garlic
- brown onion
- red onion
- green pepper
- courgette
- mixed beans (including chickpeas, black beans, haricot beans, pinto beans, red kidney beans, adzuki beans)
- sun-dried tomato couscous
- fresh rosemary
- avocado
- hemp seeds
- baby spinach
- aioli dressing
- black pepper
Preparation
Sauté the chopped garlic, brown and red onion, green pepper, and courgette.
Stir in the mixed beans, sun-dried tomato couscous, and fresh rosemary.
Top with sliced avocado and hemp seeds.
Dress the baby spinach salad with aioli dressing and black pepper.
