One-Pot Creamy Cauliflower Miso Pasta

Ingredients

Pasta

  • 1 cup dried pasta (I used @sanremopasta high protein penne, use GF pasta to make it gluten free )
  • 1 cup of broccoli, chopped
  • 2-3 mushrooms, sliced
  • handful of cherry tomatoes
  • 100g tempeh, crumbled (I used @organicvillage )

Cauliflower miso sauce

  • 1 cup steamed cauliflower
  • 1 teaspoon miso paste
  • 2 tablespoons nutritional yeast
  • 1/2 cup almond milk ( I used @califia_farms )
  • 1/2 teaspoon garlic powder
  • optional: 1 tablespoon cashew butter for extra creaminess

Preparation

  1. Cook the pasta according to packet instructions. Add in the broccoli, tomatoes and mushrooms halfway through so that they can also cook with the pasta.

  2. Once the pasta is done, drain and return to the pot

  3. Make the cauliflower miso sauce by combining all the sauce ingredients in a blender. Blend until smooth then pour the sauce into the pot with the pasta

  4. Stir to combine

  5. Serve immediately
