Pineapple Cake with Cream and Coconut Meringue
Ingredients
Bottom layer
- 1 large pineapple
- 1 cup sugar
Batter
- 3 eggs
- 2 cups sugar
- 3 cups flour
- 1 cup boiling milk
- 1 teaspoon royal baking powder
Cream
- 1 liter milk
- 1 can sweetened condensed milk
- 2 egg yolks
- 3 tablespoons cornstarch
Meringue
- 3 egg whites
- 3 tablespoons refined sugar
- 1 small package shredded coconut
Preparation
Bottom layer and baking
Chop the pineapple into very small pieces and place in a large baking dish, then sprinkle 1 cup of sugar and set aside
Beat the batter ingredients by hand
Pour the batter over the chopped pineapple and bake in a medium oven for approximately 40 minutes
Cream
In a saucepan, combine the cream ingredients, dissolving the cornstarch in a little water, and cook over medium heat until thickened
Spread the cream over the baked cake
Meringue topping
Beat the meringue in a mixer and cover the cake with it, then sprinkle coconut
