Pineapple Cake with Cream and Coconut Meringue

Ingredients

Bottom layer

  • 1 large pineapple
  • 1 cup sugar

Batter

  • 3 eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 cup boiling milk
  • 1 teaspoon royal baking powder

Cream

  • 1 liter milk
  • 1 can sweetened condensed milk
  • 2 egg yolks
  • 3 tablespoons cornstarch

Meringue

  • 3 egg whites
  • 3 tablespoons refined sugar
  • 1 small package shredded coconut

Preparation

Bottom layer and baking

  1. Chop the pineapple into very small pieces and place in a large baking dish, then sprinkle 1 cup of sugar and set aside

  2. Beat the batter ingredients by hand

  3. Pour the batter over the chopped pineapple and bake in a medium oven for approximately 40 minutes

Cream

  1. In a saucepan, combine the cream ingredients, dissolving the cornstarch in a little water, and cook over medium heat until thickened

  2. Spread the cream over the baked cake

Meringue topping

  1. Beat the meringue in a mixer and cover the cake with it, then sprinkle coconut
