Pineapple Cream Cake with Coconut Meringue Topping

Ingredients

Batter

  • 3 eggs
  • 2 cups sugar
  • 3 cups flour
  • 1 cup boiling milk
  • 1 teaspoon baking powder

Custard

  • 1 liter milk
  • 1 can sweetened condensed milk
  • 2 egg yolks
  • 3 tablespoons cornstarch

Meringue

  • 3 egg whites
  • 3 tablespoons granulated sugar

Additional items

  • 1 large pineapple
  • 1 small package shredded coconut

Preparation

  1. Chop the pineapple into very small pieces and place in a large baking dish. Sprinkle with 1 cup sugar and set aside

  2. Beat the batter ingredients together by hand until combined

  3. Pour the batter over the pineapple in the baking dish and bake until set

  4. In a saucepan, combine the custard ingredients, making sure the cornstarch is dissolved in a little water first, and cook over medium heat until thickened

  5. Pour the custard over the baked cake

  6. Beat the meringue ingredients in a mixer until stiff peaks form

  7. Spread the meringue over the custard layer

  8. Sprinkle with shredded coconut
