Pineapple Cream Cake with Coconut Meringue Topping
Ingredients
Batter
- 3 eggs
- 2 cups sugar
- 3 cups flour
- 1 cup boiling milk
- 1 teaspoon baking powder
Custard
- 1 liter milk
- 1 can sweetened condensed milk
- 2 egg yolks
- 3 tablespoons cornstarch
Meringue
- 3 egg whites
- 3 tablespoons granulated sugar
Additional items
- 1 large pineapple
- 1 small package shredded coconut
Preparation
Chop the pineapple into very small pieces and place in a large baking dish. Sprinkle with 1 cup sugar and set aside
Beat the batter ingredients together by hand until combined
Pour the batter over the pineapple in the baking dish and bake until set
In a saucepan, combine the custard ingredients, making sure the cornstarch is dissolved in a little water first, and cook over medium heat until thickened
Pour the custard over the baked cake
Beat the meringue ingredients in a mixer until stiff peaks form
Spread the meringue over the custard layer
Sprinkle with shredded coconut
