Brazilian Spiced Brown Sugar Cake
Ingredients
- 4 eggs
- 4 tablespoons butter
- 1 cup sugar
- 1 cup brown sugar
- 1 cup milk
- 1 teaspoon ground cinnamon
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- a pinch of nutmeg
- Butter, for greasing
- All-purpose flour, for greasing
- Ground cinnamon, for sprinkling
Topping
- 1 can sweetened condensed milk
- 1/2 cup milk
- 1 tablespoon butter
- 2 egg yolks
Preparation
Blend the eggs, butter, sugar, brown sugar, and milk in a blender for 2 minutes
Transfer to a bowl, add the cinnamon, flour, baking powder, and nutmeg, and mix gently with a whisk
Pour into a greased and floured pan and bake in a preheated medium oven for 30 minutes or until golden
Remove and unmold after it has cooled slightly
For the topping, in a saucepan, heat the sweetened condensed milk, milk, butter, and egg yolks over medium heat, stirring until thickened
Turn off the heat, let cool slightly, and pour over the cake
Sprinkle with cinnamon
