Brazilian Fluffy Sponge Cake

Ingredients

  • 4 eggs
  • 2 cups sugar
  • 2 cups all-purpose flour
  • 2 tablespoons margarine or butter
  • 1 cup hot milk
  • 1 tablespoon baking powder

Frosting

  • 1 (14-ounce) can sweetened condensed milk
  • 1 (200ml) carton heavy cream
  • 1 tablespoon butter
  • Milk powder, for sprinkling

Preparation

  1. Separate egg whites and yolks; set yolks aside

  2. Beat egg whites until stiff peaks form

  3. Without stopping the mixer, add yolks, sugar, and margarine or butter; beat until light and fluffy

  4. In a separate bowl, mix flour and baking powder

  5. Add the flour mixture to the batter; mix until just combined

  6. Gradually add hot milk, pouring very slowly, while mixing until incorporated

  7. Pour batter into a greased and floured cake pan

  8. Bake at 180Β°C (350Β°F) for about 45 minutes, or until a toothpick inserted comes out clean

Frosting

  1. In a saucepan, combine sweetened condensed milk, heavy cream, and butter

  2. Cook over medium heat, stirring constantly, until it begins to bubble; remove from heat

  3. Pour the frosting over the cooled cake

  4. Sprinkle milk powder on top

  1. Use a standard 240ml measuring cup for accurate results
