Brazilian Fluffy Sponge Cake
Ingredients
- 4 eggs
- 2 cups sugar
- 2 cups all-purpose flour
- 2 tablespoons margarine or butter
- 1 cup hot milk
- 1 tablespoon baking powder
Frosting
- 1 (14-ounce) can sweetened condensed milk
- 1 (200ml) carton heavy cream
- 1 tablespoon butter
- Milk powder, for sprinkling
Preparation
Separate egg whites and yolks; set yolks aside
Beat egg whites until stiff peaks form
Without stopping the mixer, add yolks, sugar, and margarine or butter; beat until light and fluffy
In a separate bowl, mix flour and baking powder
Add the flour mixture to the batter; mix until just combined
Gradually add hot milk, pouring very slowly, while mixing until incorporated
Pour batter into a greased and floured cake pan
Bake at 180Β°C (350Β°F) for about 45 minutes, or until a toothpick inserted comes out clean
Frosting
In a saucepan, combine sweetened condensed milk, heavy cream, and butter
Cook over medium heat, stirring constantly, until it begins to bubble; remove from heat
Pour the frosting over the cooled cake
Sprinkle milk powder on top

Use a standard 240ml measuring cup for accurate results
