Easy Blender Lemon Cake

Ingredients

  • 3 eggs
  • 2 cups sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 1 cup warm milk
  • 1 tablespoon baking powder
  • Zest of 1 lemon
  • Juice of 1 lemon

Frosting

  • 1 can sweetened condensed milk
  • 200ml heavy cream
  • 200ml lemon juice

Preparation

  1. Blend eggs, oil, milk, and sugar in a blender for about 3 minutes

  2. Add lemon juice, flour, and lemon zest and blend for 1 minute

  3. Add baking powder and mix well until homogeneous

  4. Pour into a greased and floured pan

  5. Bake in a preheated oven at 180Β°C for 35 to 50 minutes

Frosting

  1. Blend sweetened condensed milk, heavy cream, and lemon juice in a blender for 3 minutes

  2. Refrigerate the frosting for 30 minutes

  3. Wait for the cake to cool completely

  4. Cover the cake with the frosting

  5. Serve immediately
