Easy Blender Lemon Cake
Ingredients
- 3 eggs
- 2 cups sugar
- 2 1/2 cups all-purpose flour
- 1/2 cup vegetable oil
- 1 cup warm milk
- 1 tablespoon baking powder
- Zest of 1 lemon
- Juice of 1 lemon
Frosting
- 1 can sweetened condensed milk
- 200ml heavy cream
- 200ml lemon juice
Preparation
Blend eggs, oil, milk, and sugar in a blender for about 3 minutes
Add lemon juice, flour, and lemon zest and blend for 1 minute
Add baking powder and mix well until homogeneous
Pour into a greased and floured pan
Bake in a preheated oven at 180Β°C for 35 to 50 minutes
Frosting
Blend sweetened condensed milk, heavy cream, and lemon juice in a blender for 3 minutes
Refrigerate the frosting for 30 minutes
Wait for the cake to cool completely
Cover the cake with the frosting
Serve immediately
