Quick and Easy Blender Lemon Cake

Ingredients

Cake

  • 3 eggs
  • 2 cups sugar
  • 2 1/2 cups all-purpose flour
  • 1/2 cup vegetable oil
  • 1 cup warm milk
  • 1 teaspoon baking powder
  • Zest of 1 lemon
  • Juice of 1 lemon

Topping

  • 1 can (395g) sweetened condensed milk
  • 1 small carton (200ml) heavy cream
  • 200 ml lemon juice

Preparation

Cake

  1. Blend eggs, vegetable oil, warm milk, and sugar in a blender for 3 minutes

  2. Add lemon juice, all-purpose flour, and lemon zest and blend for 1 minute

  3. Gently fold in baking powder until the batter is smooth

  4. Pour the batter into a greased and floured cake pan

  5. Bake in a preheated oven at 180Β°C (350Β°F) for 35 to 50 minutes, or until a toothpick inserted in the center comes out clean

Topping

  1. Blend sweetened condensed milk, heavy cream, and lemon juice in a blender for 3 minutes

  2. Refrigerate the topping for 30 minutes

  3. Let the cake cool completely

  4. Spread the chilled topping over the cooled cake

  5. Serve immediately
