Brazilian Lemon Cake with Gelatin Glaze

Ingredients

Cake batter

  • 1 cup vegetable oil
  • 4 large eggs
  • 1 cup plain yogurt
  • 1 packet lemon-flavored gelatin (about 85g)
  • 1 tablespoon baking powder
  • 1 package lemon-flavored cake mix (about 400-500g)

Lemon glaze

  • 1 can sweetened condensed milk
  • juice of 1 lemon

Preparation

Cake

  1. Preheat oven to 350Β°F (175Β°C) and grease a 9-inch round cake pan

  2. Blend vegetable oil, eggs, yogurt, lemon gelatin, baking powder, and cake mix in a blender until smooth

  3. Pour the batter into the prepared pan

  4. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean

  5. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely

Glaze

  1. Whisk sweetened condensed milk and lemon juice in a small bowl until smooth

  2. Pour the glaze over the cooled cake, allowing it to drizzle down the sides
