Brazilian Lemon Cake with Gelatin Glaze
Ingredients
Cake batter
- 1 cup vegetable oil
- 4 large eggs
- 1 cup plain yogurt
- 1 packet lemon-flavored gelatin (about 85g)
- 1 tablespoon baking powder
- 1 package lemon-flavored cake mix (about 400-500g)
Lemon glaze
- 1 can sweetened condensed milk
- juice of 1 lemon
Preparation
Cake
Preheat oven to 350Β°F (175Β°C) and grease a 9-inch round cake pan
Blend vegetable oil, eggs, yogurt, lemon gelatin, baking powder, and cake mix in a blender until smooth
Pour the batter into the prepared pan
Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean
Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely
Glaze
Whisk sweetened condensed milk and lemon juice in a small bowl until smooth
Pour the glaze over the cooled cake, allowing it to drizzle down the sides
