Simple Yogurt Cake with Lemon Glaze
Ingredients
- 1 cup natural yogurt (170g)
- 1 cup oil (not too full)
- 3 eggs
- 2 cups all-purpose flour
- 2 cups sugar (not too full)
- 1 tablespoon baking powder
Lemon glaze
- 2 cans sweetened condensed milk
- Juice of 4 lemons, freshly squeezed
Preparation
Preheat oven to 180Β°C (350Β°F). Grease and flour a baking pan
In a blender, combine yogurt, oil, eggs, flour, and sugar; blend until smooth
Add baking powder and pulse just until combined
Pour the batter into the prepared pan
Bake for about 30 minutes or until golden brown
Lemon glaze
In a bowl, combine sweetened condensed milk and lemon juice; whisk until smooth
Assembly
Pour the lemon glaze evenly over the warm cake
Sprinkle with lemon zest
