Easy Yogurt Cake with Tangy Lemon Glaze

Ingredients

  • 1 cup plain yogurt (170g)
  • 1 cup oil, not too full
  • 3 eggs
  • 2 cups all-purpose flour
  • 2 cups sugar, not too full
  • 1 tablespoon baking powder

Lemon glaze

  • 2 (14 oz) cans sweetened condensed milk
  • juice of 4 fresh lemons

Preparation

Cake

  1. Place plain yogurt, oil, eggs, all-purpose flour, and sugar in a blender and blend until smooth

  2. Add baking powder and blend just until combined

  3. Pour the batter into a greased and floured cake pan

  4. Bake in a preheated oven at 350Β°F (180Β°C) for about 30 minutes, or until golden brown

Lemon glaze

  1. Combine sweetened condensed milk and lemon juice in a bowl

  2. Stir until well mixed

Assembly

  1. Unmold the cake onto a serving plate

  2. Pour the lemon glaze over the cake

  3. Sprinkle with lemon zest

Tips

  1. Use the same yogurt cup to measure all ingredients for consistent results

  2. The recipe was tested in a ballerine pan with a 22cm (8.5 inch) bottom diameter, 8cm (3 inch) height, and 26cm (10 inch) top diameter
