Rainbow Noodle Nourish Bowl

Ingredients

  • nest of spelt noodles
  • Thai red curry paste
  • unsweetened coconut milk
  • toasted cashews
  • toasted coconut chips
  • pineapple
  • mixed leaves (iceberg and rocket)
  • red cabbage
  • carrot, grated
  • cucumber
  • baby pepper
  • smoked tofu
  • crispy fried onions
  • black sesame seeds

Preparation

  1. Cook the spelt noodles according to package instructions

  2. Prepare the red coconut curry sauce by mixing Thai red curry paste with unsweetened coconut milk

  3. Toast the cashews and coconut chips in a dry pan until golden brown

  4. Grate the carrot if not already prepared

  5. Chop the cucumber, red cabbage, and baby pepper into desired sizes

  6. Ensure smoked tofu and crispy fried onions are ready; use as is or prepare if needed

  7. Assemble the bowl by layering mixed leaves, cooked noodles, vegetables, smoked tofu, and pouring over the curry sauce

  8. Top with toasted cashews, coconut chips, crispy fried onions, and black sesame seeds
