Rainbow Vegetable and Noodle Bowl

Ingredients

  • 1 packet beetroot noodles
  • 1 sweetcorn
  • 1 large carrot
  • 1 spring onion
  • Handful mange tout
  • 1 cup rocket
  • 1 cup coriander
  • Handful fresh mint
  • Black sesame seeds

Peanut butter vegetables

  • 1 sweet potato, diced
  • 1 cup cauliflower florets
  • 1 tablespoon peanut butter
  • 1 teaspoon tamari sauce
  • 1 teaspoon maple syrup
  • 1 tablespoon sesame oil
  • 1/2 teaspoon chili flakes
  • Salt and pepper to taste

Sesame ginger dressing

  • 1 tablespoon minced ginger
  • 2 tablespoons sesame oil
  • 2 tablespoons fresh lemon or lime juice
  • 1 teaspoon tamari sauce
  • Pinch cayenne pepper
  • 1 teaspoon maple syrup

Preparation

  1. Cook the beetroot noodles according to package instructions.

  2. Preheat the oven to 200°C and line a baking tray.

  3. Toss the sweet potato and cauliflower with peanut butter, tamari sauce, maple syrup, sesame oil, chili flakes, salt, and pepper until well coated.

  4. Bake for 25 to 30 minutes until the vegetables start turning golden.

  5. Place all dressing ingredients in a jar and shake to combine.

  6. Toss all the ingredients in a beautiful bowl and drizzle with the sesame ginger dressing and black sesame seeds.
