Cauliflower Satay Sauce for Buddha Bowls
Ingredients
- 1/2 cup steamed cauliflower
- 2 tablespoons peanut butter
- 1 clove garlic
- 1 teaspoon curry powder
- 1 tablespoon coconut sugar
- 1 1/2 tablespoons soy sauce
- 1/2 tablespoon vegan fish sauce
- 2 tablespoons water
- 1/2 tablespoon lemon juice
- handful of roasted peanuts
Preparation
Add all of the ingredients except for the roasted peanuts into your high speed blender (I used the 225ml blending container on my @vitamix)
Blend until the sauce is thick and smooth
Add in the peanuts and blend until the peanuts are broken down, but still a little bit chunky
Serving suggestions: drizzle the sauce over your protein, grain or vegetables for a delicious meal!
