Cauliflower Satay Sauce for Buddha Bowls

Ingredients

  • 1/2 cup steamed cauliflower
  • 2 tablespoons peanut butter
  • 1 clove garlic
  • 1 teaspoon curry powder
  • 1 tablespoon coconut sugar
  • 1 1/2 tablespoons soy sauce
  • 1/2 tablespoon vegan fish sauce
  • 2 tablespoons water
  • 1/2 tablespoon lemon juice
  • handful of roasted peanuts

Preparation

  1. Add all of the ingredients except for the roasted peanuts into your high speed blender (I used the 225ml blending container on my @vitamix)

  2. Blend until the sauce is thick and smooth

  3. Add in the peanuts and blend until the peanuts are broken down, but still a little bit chunky

  4. Serving suggestions: drizzle the sauce over your protein, grain or vegetables for a delicious meal!
