Spicy and Sweet Cauliflower Wings
Ingredients
- 1 head cauliflower, cut into florets (about 1 1/4 lb)
Batter
- 3/4 cup chickpea flour
- 1 healthy pinch sea salt
- 1/2 tsp ground ginger
- 1/2 cup unsweetened plain flax milk
- 1 tbsp cornstarch
- 6-8 Tbsp water
Sauce
- 3 Tbsp crushed tomato sauce
- 1-2 Tbsp gochujang (Korean chilli paste)
- 1/2 cup maple syrup
- 2 Tbsp soy sauce
- 2 Tbsp minced garlic
- 1 Tbsp sesame oil
Preparation
Prepare the batter by mixing the dry ingredients together, then adding the flax milk and water one tablespoon at a time until well combined and thick but pourable.
Add the cauliflower to the batter to coat it, shake off excess, and place in the air-fryer basket, giving each piece about 1 inch of room to prevent sogginess.
Bake in the air fryer at 400°F for 15-17 minutes until crispy and golden.
While the wings are cooking, make the sauce: Add all sauce ingredients to a medium saucepan, bring to a gentle boil, and simmer until bubbly and thickened.
Remove the wings from the air fryer and place in a large bowl, then pour the sauce over and toss to coat.
Return the coated wings to the air fryer and cook at 400°F for an additional 5-7 minutes.
Optionally, garnish with scallions and sesame seeds.
