Raw Cherry Ripe Dessert

Ingredients

Base

  • 1/2 cup Dates (soaked)
  • 1/3 cup Desiccated Coconut
  • 1/4 cup Protein Powder (I used @macr0mike salted vanilla)
  • 2 tbs Coconut Oil
  • 1 tsp Vanilla Extract

Filling

  • 1 cup Frozen Cherries
  • 1/3 cup Frozen Raspberries
  • 3/4 cup Desiccated Coconut
  • 2 tbs Coconut Oil
  • 2 tbs Brown Rice Syrup

Choc top

  • 40g Dark Chocolate (melted)

Preparation

  1. Blend ingredients for the base together until uniform. Press firmly into a lined tray and put in the fridge.

  2. Blend together ingredients for the filling and pour over the base. Leave in the fridge for at least half an hour for the filling to set.

  3. Melt your chocolate and pour over the top of the cherry layer. Work fast as the chocolate will start to set pretty quickly!

  4. Slice into desired sizes and store in the fridge. Can be stored in the freezer too if you want them a little firmer.
