Refreshing Plant-Based Salad Nicoise with Vinaigrette

Ingredients

  • potatoes
  • beets
  • green beans
  • romaine lettuce
  • tomatoes
  • avocado
  • sprouts
  • capers
  • olives

Vinaigrette

  • dijon mustard
  • 1 garlic clove
  • 1/2 shallot
  • 1 tablespoon nutritional yeast
  • balsamic vinegar
  • maple syrup
  • salt and pepper

Preparation

  1. Boil potatoes and beets.

  2. Steam green beans.

  3. Lay down a layer of romaine.

  4. Add tomatoes and avocado.

  5. Top with sprouts, capers, and olives.

  6. Whisk together dijon mustard, 1 minced garlic clove, 1/2 minced shallot, 1 tablespoon nutritional yeast, balsamic vinegar, a tiny bit of maple syrup, salt, and pepper to make the vinaigrette.

  7. Drizzle the vinaigrette over the salad.

  8. Devour as much as you please.
