Refreshing Plant-Based Salad Nicoise with Vinaigrette
Ingredients
- potatoes
- beets
- green beans
- romaine lettuce
- tomatoes
- avocado
- sprouts
- capers
- olives
Vinaigrette
- dijon mustard
- 1 garlic clove
- 1/2 shallot
- 1 tablespoon nutritional yeast
- balsamic vinegar
- maple syrup
- salt and pepper
Preparation
Boil potatoes and beets.
Steam green beans.
Lay down a layer of romaine.
Add tomatoes and avocado.
Top with sprouts, capers, and olives.
Whisk together dijon mustard, 1 minced garlic clove, 1/2 minced shallot, 1 tablespoon nutritional yeast, balsamic vinegar, a tiny bit of maple syrup, salt, and pepper to make the vinaigrette.
Drizzle the vinaigrette over the salad.
Devour as much as you please.
