Roasted Hispi Cabbage with Cashew Sauce
Ingredients
- 1 hispi/sweetheart cabbage
- 1 big handful of cashews
- 1 tbsp nutritional yeast
- 1/2 tsp smoked paprika
- 1/2 tsp garlic granules
- 1/2 tsp onion granules
- 3-4 tbsp garlic chilli breadcrumbs
- 1 tbsp fresh chives
Preparation
Preheat the oven to 200C, quarter the cabbage and drizzle with olive oil and salt. Roast for about 40-45 minutes until charred and crisp.
Meanwhile put all of the cashews and spices into a blender, top with warm water and blend until smooth.
Pour this over the cabbage, once cooked, finish with breadcrumbs and chives.
Notes
This roasted hispi cabbage is a real favourite of mine. Anything roasted usually hits the spot but this just hits different. You have to try it!
