Roasted Hispi Cabbage with Cashew Sauce

Ingredients

  • 1 hispi/sweetheart cabbage
  • 1 big handful of cashews
  • 1 tbsp nutritional yeast
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic granules
  • 1/2 tsp onion granules
  • 3-4 tbsp garlic chilli breadcrumbs
  • 1 tbsp fresh chives

Preparation

  1. Preheat the oven to 200C, quarter the cabbage and drizzle with olive oil and salt. Roast for about 40-45 minutes until charred and crisp.

  2. Meanwhile put all of the cashews and spices into a blender, top with warm water and blend until smooth.

  3. Pour this over the cabbage, once cooked, finish with breadcrumbs and chives.

Notes

  1. This roasted hispi cabbage is a real favourite of mine. Anything roasted usually hits the spot but this just hits different. You have to try it!
