Simple and Delicious Vegan Quesadillas

Ingredients

  • 1-2 teaspoons olive oil
  • 2 cloves garlic
  • 1/3 red onion
  • 1/3 white onion
  • 1 jalapeno (optional)
  • 1 red bell pepper
  • 80g mushrooms
  • 1-2 small zucchinis
  • 100g sweet corn
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 3-4 large whole wheat tortillas
  • 1/2 cup vegan cheese

Preparation

  1. Sauté garlic, onions, mushrooms, zucchini, bell pepper, and corn with oil until onions are translucent.

  2. Stir in cumin, salt, and pepper to taste.

  3. Remove from stove and set aside.

  4. In a pan, heat oil, place a tortilla, add vegan cheese, and cook until cheese is melted.

  5. Add the sauté mixture on top and cover with another tortilla.

  6. Repeat the process with remaining mixture and tortillas.

  7. Cut into even slices and enjoy.
