Strawberry and Vanilla Granola Tarts

Ingredients

  • 1 Cup Gf rolled oats
  • 1/4 C desiccated coconut
  • 2 Tbls hemp seeds
  • 2 Tbls Goji berries
  • 40g Almond chopped very finely
  • Wet
  • 40ml coconut oil- melted
  • 35ml pure maple syrup
  • 1 1/2 Tbls Apple sauce
  • 1 Tsp pure vanilla extract
  • Pinch salt
  • Coconut yogurt
  • Drizzle of pure vanilla extract
  • 1 x Punnet strawberries

Preparation

  1. Heat oven 170 C

  2. Pulse almonds and goji berries in a food processor until mainly crumbs but with a few chunky bits

  3. Combine dry ingredients

  4. In a separate bowl combine wet ingredients

  5. Pour wet over dry and thoroughly combine

  6. Allow to sit for 5 mins

  7. Place 2-3 heaped Tbls of granola mix into tart case, flatten base and all around the sides with your fingers.. make sure it’s tightly packed

  8. Place into oven and bake for aprox 8 mins, rotate so they evenly brown, then cook for a further 7 mins,If they are looking like they are browning to quickly turn oven down to 150C and cook for a further 5 mins

  9. Take out and allow to cool completely

  10. Place ingredients into a bowl and mix

  11. When you are ready to serve them, place filling into granola tarts and top with strawberries

  12. Best eaten straight away
