Stuffed Peppers with Couscous and Feta
Ingredients
- 4 round peppers
- 2 tablespoons olive oil
- 180 grams couscous
- 2 cups vegetable broth
- juice of 1/2 lemon
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon thyme
- 60 grams crumbled feta
- 2 tablespoons chopped parsley for garnish
Preparation
Cook couscous in vegetable broth with olive oil, lemon juice, garlic powder, smoked paprika, and thyme until tender
Mix the cooked couscous with crumbled feta
Stuff the mixture into the round peppers
Bake the stuffed peppers until the peppers are tender and the feta is melted
Garnish with chopped parsley and serve, either hot or cold
