Three Bean Chilli

Ingredients

  • 1 white onion, finely died
  • 2 cloves of garlic, mashed
  • 1 medium carrot, grated
  • 1 green pepper, diced
  • 2 tsp mild chilli powder (add more if you prefer ?)
  • 1 tsp of smoked paprika + ground coriander + ground cumin
  • 2 cans chopped tomatoes
  • 3 cans of beans of your choice (i use kidney beans, chickpeas and cannellini beans)
  • 1 cup sweetcorn, tinned or frozen
  • 2 tbsp balsamic vinegar
  • 1 lemon
  • 1 lime

Preparation

  1. Heat a glug of oil in a large pan, add the onion and fry over a medium heat for 2 minutes until it starts to soften

  2. Add the garlic, green pepper and grated carrot and fry for another 2 minutes

  3. Add all of the spices to the pan and stir well for a minute or two to release the aromas

  4. Pour in the tinned tomatoes, drain and add the canned beans to the pan, stir well and simmer for 15 minutes

  5. Add the sweetcorn, balsamic vinegar, and juice of half a lemon

  6. Stir it all in and bring to the boil, then simmer on a low heat for 10 minutes

  7. Remove from the heat and add the juice of one lime

  8. Serve with rice, guacamole, sour cream and finely chopped coriander

  9. Enjoy!
