My bangers and butter bean mash
Ingredients
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- 6 spring onions, finely sliced
- 1 large lemon, zested and juiced
- 2 x 400g cans butter beans, drained and rinsed
- 1/2 - 1 tsp ground white pepper
Preparation
Heat the olive oil in a non stick pan on a medium to low heat
Add the garlic, spring onions and lemon zest and sauté for a few mins until softened
Add the lemon juice and butter beans and cook for a further few mins, then gently mash using a potato masher. Season with white pepper and salt (if using) then cook for 2 mins more to make sure it's warmed through thoroughly
Serve with good quality sausages, peas and gravy
