My bangers and butter bean mash

Ingredients

  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 6 spring onions, finely sliced
  • 1 large lemon, zested and juiced
  • 2 x 400g cans butter beans, drained and rinsed
  • 1/2 - 1 tsp ground white pepper

Preparation

  1. Heat the olive oil in a non stick pan on a medium to low heat

  2. Add the garlic, spring onions and lemon zest and sauté for a few mins until softened

  3. Add the lemon juice and butter beans and cook for a further few mins, then gently mash using a potato masher. Season with white pepper and salt (if using) then cook for 2 mins more to make sure it's warmed through thoroughly

  4. Serve with good quality sausages, peas and gravy
