Avocado and Edamame Hummus Dip

Ingredients

  • 1 1/2 cups frozen shelled edamame, thawed
  • 1 medium ripe avocado
  • 2 cloves garlic
  • Zest and juice of 1 large lemon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 3 tablespoons finely chopped fresh cilantro
  • 3 tablespoons olive oil

Preparation

  1. In the bowl of a food processor fitted with a steel blade, puree the edamame, avocado, garlic, lemon zest, lemon juice, kosher salt, black pepper, onion powder, and cilantro until evenly blended.

  2. With the food processor running, drizzle in the olive oil and continue blending just until combined, about 5 additional seconds.

  3. Taste and add additional salt and pepper to taste.

  4. Serve with pita chips and veggies as desired.
