Comforting Creamy Butter Bean Mash
Ingredients
- 1 tbsp olive oil
- 2 garlic cloves finely chopped
- 5 spring onions finely chopped
- 2 garlic cloves, peeled and crushed
- 1 tbsp dijon mustard
- 1 sprig rosemary (strip the leaves from the stem & finely chop)
- 2 cans drained butter beans
- 1/4 cup nutritional yeast
- 1 lemon, juiced
- 2 tbsp dairy free milk (a little extra if you like you mash extra smooth)
- pinch salt & black pepper
Preparation
Gently fry the spring onion, garlic and rosemary for 2 minutes
Add the butter beans, Dijon mustard, nutritional yeast & lemon juice to a pan
Mix everything together well so the beans in all that flavour, season with the salt & pepper allow to heat through for 3 mins
Add in the dairy free milk and start Mashing, alternatively you can add them to a blender for an extra smooth consistency
Enjoy ? I love to serve mine simply with a big bunch of wilted greens & fresh parsley
