Comforting Creamy Butter Bean Mash

Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves finely chopped
  • 5 spring onions finely chopped
  • 2 garlic cloves, peeled and crushed
  • 1 tbsp dijon mustard
  • 1 sprig rosemary (strip the leaves from the stem & finely chop)
  • 2 cans drained butter beans
  • 1/4 cup nutritional yeast
  • 1 lemon, juiced
  • 2 tbsp dairy free milk (a little extra if you like you mash extra smooth)
  • pinch salt & black pepper

Preparation

  1. Gently fry the spring onion, garlic and rosemary for 2 minutes

  2. Add the butter beans, Dijon mustard, nutritional yeast & lemon juice to a pan

  3. Mix everything together well so the beans in all that flavour, season with the salt & pepper allow to heat through for 3 mins

  4. Add in the dairy free milk and start Mashing, alternatively you can add them to a blender for an extra smooth consistency

  5. Enjoy ? I love to serve mine simply with a big bunch of wilted greens & fresh parsley
