Vegan Banana Pudding with Mori-Nu Silken Tofu

Ingredients

  • 1 block of Mori-Nu Silken Tofu (Extra Firm or Firm)
  • 3 bananas
  • 2 tbsp maple syrup
  • 2 tsp vanilla
  • 1/4 cup coconut cream
  • 2 tbsp arrowroot powder
  • Vegan vanilla wafer cookies
  • Dairy-free whipped cream

Preparation

  1. In a food processor, combine the block of tofu, bananas, maple syrup, vanilla, and coconut cream.

  2. Blend until the mixture has a creamy consistency and is well mixed.

  3. In a small bowl, whisk together two tablespoons of arrowroot powder with a small amount of water to form a thick paste.

  4. Add the arrowroot paste to the blender with the rest of the pudding mixture and blend on high speed. This step is optional but will thicken the pudding and give it a nice consistency.

  5. Once the pudding is blended, it's ready to assemble.

  6. Crumble up the vegan vanilla wafer cookies and add a layer of cookies to the bottom of each glass.

  7. Add a layer of banana pudding, followed by a layer of whipped cream.

  8. Repeat the layers until you reach the top of the glass.

  9. Top each glass with more cookies and banana slices.

  10. Dig in and enjoy!
