Vegan Big Mac Pizza

Ingredients

For the Secret Sauce

  • 6 tbsp soy mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp white wine vinegar
  • 1 tbsp mustard
  • 1/2 teaspoon sweet paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp turmeric
  • 1 gherkin, finely chopped
  • 2 tbsp gherkin pickle juice

For the Pizza

  • Pizza dough (home made or store bought)
  • 300 g plant-based mince (Beyond Meat)
  • 1 white onion, sliced
  • 1 cup grated dairy-free cheese
  • 1 cup chopped lettuce
  • 3 gherkins, sliced

Preparation

  1. Make the sauce. Place all the secret sauce ingredients into a blender and pulse until creamy and smooth.

  2. Preheat the oven to 200°C and line a pizza tray with parchment paper.

  3. Roll out the pizza dough into a circle, about 5mm thick, and place it on the prepared tray.

  4. Spread about 3 tablespoons of the secret sauce over the pizza dough base.

  5. Top the sauce with plant-based mince, sliced onions, and grated dairy-free cheese.

  6. Bake the pizza for 10 minutes or until the crust is golden and the cheese has melted.

  7. Remove the pizza from the oven and top it with chopped lettuce, sliced gherkins, and more of the secret sauce.

  8. Slice the pizza and enjoy immediately.
