Smoked Apple Sage Sausage, Potato, and Kale Soup

Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 3 plant-based FieldRoast Smoked Apple Sage Sausages, diced
  • 3 cups diced yellow potatoes
  • 1 tbsp finely chopped fresh sage
  • 3/4 tsp salt
  • 1/4 tsp red pepper flakes (plus more for topping)
  • 5 cups vegetable broth
  • 1 cup nondairy cream
  • 4 cups kale, chopped

Preparation

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes.

  2. Add minced garlic and diced FieldRoast Smoked Apple Sage Sausages to the pot. Continue cooking for an additional 3-4 minutes until the sausages start to brown.

  3. Add diced yellow potatoes, chopped fresh sage, salt, red pepper flakes, vegetable broth, and nondairy cream to the pot. Bring the mixture to a boil.

  4. Reduce the heat and let the soup simmer for 20 minutes or until the potatoes are fork-tender.

  5. Add the chopped kale to the pot and cook until wilted.

  6. Serve the soup hot, and garnish with additional red pepper flakes if desired.
