Smoked Apple Sage Sausage, Potato, and Kale Soup
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 3 plant-based FieldRoast Smoked Apple Sage Sausages, diced
- 3 cups diced yellow potatoes
- 1 tbsp finely chopped fresh sage
- 3/4 tsp salt
- 1/4 tsp red pepper flakes (plus more for topping)
- 5 cups vegetable broth
- 1 cup nondairy cream
- 4 cups kale, chopped
Preparation
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5-7 minutes.
Add minced garlic and diced FieldRoast Smoked Apple Sage Sausages to the pot. Continue cooking for an additional 3-4 minutes until the sausages start to brown.
Add diced yellow potatoes, chopped fresh sage, salt, red pepper flakes, vegetable broth, and nondairy cream to the pot. Bring the mixture to a boil.
Reduce the heat and let the soup simmer for 20 minutes or until the potatoes are fork-tender.
Add the chopped kale to the pot and cook until wilted.
Serve the soup hot, and garnish with additional red pepper flakes if desired.
