Vegan Chocolate Chip Cookies
Ingredients
- 250g vegan butter (softened if hard)
- 200g dark brown sugar
- 100g golden caster sugar
- 460g self raising flour
- 1 tsp salt
- 2 tsp vanilla extract
- 100g chocolate chips
Preparation
Cream together the butter and sugars.
Add in the flour, salt and vanilla and mix until you have a smooth dough. If it seems a little dry, add a splash of soya milk.
Roll a heaped tablespoon of mixture into a ball, place on a lined baking sheet, and flatten slightly with your fingers.
Repeat for the rest of the mixture, leaving room between the cookies as they will spread.
Bake at 180C for 10 minutes.
Leave to cool on the tray for a couple of minutes before transferring to a wire rack.
Tips
Makes about 20 cookies depending on size.
You can add nuts, raisins, or colourful sprinkles instead of chocolate chips.
