Vegan Maqui Berry Cheesecake

Ingredients

Crust

  • 1 cup dates (soaked)
  • 3 1/2 cups oats
  • 1 tablespoon agave syrup

Cheesecake filling

  • 2 cups cashews (soaked overnight)
  • 1 can coconut cream
  • 4 tablespoons maple syrup
  • 1 tablespoon Maqui Berry
  • 1 teaspoon vanilla extract
  • 1 tablespoon agar agar

Preparation

  1. Blend the soaked dates in a food processor until they form a date paste, then add oats and agave syrup until the mixture comes together into a dough.

  2. Press the dough into an 8-inch tray to form the crust.

  3. Blend the soaked cashews until they have a consistency similar to thick nut butter.

  4. In a pan, heat the coconut cream until it is about to boil, add agar agar, and boil for 1 minute, then remove from heat and add to the blender with the cashews.

  5. Before blending, add all other ingredients, including the Maqui Berry, to the blender.

  6. Pour the filling on top of the crust and place in the freezer for half an hour.

  7. Before serving, let the cheesecake sit for 5 minutes.
