Vegan Meatloaf with Oats and Spices
Ingredients
- 1 cup rehydrated TVP
- 1.5 cups rolled oats
- 1/2 cooked sweet potato
- bread crumbs
- tomato paste
- soy sauce
- balsamic vinegar
- oregano
- smoked paprika
- minced garlic
- cumin
- thyme
Preparation
Rehydrate 1 cup dry TVP with 1 cup stock for 10 minutes or use a can of beans.
Cook 1/2 sweet potato in the microwave.
Combine all ingredients in a bowl.
Pile the mixture onto a baking tray in a loaf shape, loosely cover with aluminum foil, and bake at 200°C for 20 minutes.
Remove the foil, add vegetables around it, and bake for another 20-30 minutes.
Note: Potatoes can be parboiled and then roasted in an air fryer.
