Vegan Meatloaf with Oats and Spices

Ingredients

  • 1 cup rehydrated TVP
  • 1.5 cups rolled oats
  • 1/2 cooked sweet potato
  • bread crumbs
  • tomato paste
  • soy sauce
  • balsamic vinegar
  • oregano
  • smoked paprika
  • minced garlic
  • cumin
  • thyme

Preparation

  1. Rehydrate 1 cup dry TVP with 1 cup stock for 10 minutes or use a can of beans.

  2. Cook 1/2 sweet potato in the microwave.

  3. Combine all ingredients in a bowl.

  4. Pile the mixture onto a baking tray in a loaf shape, loosely cover with aluminum foil, and bake at 200°C for 20 minutes.

  5. Remove the foil, add vegetables around it, and bake for another 20-30 minutes.

  6. Note: Potatoes can be parboiled and then roasted in an air fryer.
