Vegan Tofu Spinach Pastry

Ingredients

  • 250 grams of firm tofu
  • 200 grams of spinach
  • 2 spring onions
  • 100 grams of vegan feta
  • 1 teaspoon of salt
  • Pepper
  • 1 tablespoon of oil
  • 2 sheets of vegan pastry

Preparation

  1. In a fry pan, add the oil, spinach, spring onions, 1/2 teaspoon of salt and sauté for 5 minutes. Set aside to cool.

  2. In a bowl, add the tofu, vegan feta, 1/2 teaspoon of salt, pepper and the spinach mixture, then combine.

  3. Preheat the oven to 180 degrees.

  4. In a rectangular tray, place 1 sheet of pastry and bake in the oven for 15 minutes.

  5. Place the spinach mixture onto the cooked pastry, add another sheet of pastry on top, and press down.

  6. Cook at 180 degrees for 30 minutes or until golden brown.

Notes

  1. This pastry is definitely delicious and tofu is so versatile.
