Vegan Wagon Wheels: Nostalgic Delights Reimagined 🌱🍪
Ingredients
For the Biscuits
- 1/4 cup Vanilla Protein Powder (@macr0mike - d/c “amb-han”)
- 1/4 cup Almond Flour
- 1/3 cup All Purpose Flour
- 1/4 cup Dairy-Free Butter
- 3 tbs Maple Syrup
For the Filling
- 1/4 cup Coconut Yoghurt
- 1 tbs Protein Powder*
- 5 tbs Berry Jam *Protein Powder is optional but recommended. Used @macr0mike Strawberry Cheezecake.
For the Coating
- 50g Dark Chocolate
- 1 tbs Coconut Oil
Preparation
Preheat the oven to 180°C.
In a bowl, combine the ingredients for the biscuits and stir to form a thick dough.
Shape the dough into even-sized circles and bake for 8-10 minutes. Allow them to cool.
Once cooled, create the filling by mixing coconut yoghurt with protein powder.
Spread jam onto one side of the cookies. Add the coconut cream on top and sandwich them together.
Melt the dark chocolate with coconut oil and pour it over the cookie sandwiches. Place them in the fridge to set.
Store the vegan wagon wheels in the fridge for 4-5 days.
