Vegetarian Ravioli Recipe

Ingredients

  • 150g pizza/pasta flour
  • 1/2 tsp salt
  • 1 egg yolk
  • 1 egg
  • filling:
  • 1/2 sweet potato
  • 2 tsp green pesto
  • parmasan cheese
  • provence spices
  • filling
  • mash up sweet potato
  • grate the parmasan cheese

Preparation

  1. Mix it all up and leave filling in the fridge

  2. Dough: on a baking mat/bench place the flour and create a recess in the middle, so it looks like a volcano

  3. Add egg, yolk and salt in the middle and mix in the flour gradually by using a fork

  4. Then use your hands to knead the dough (it might feel a little hard and dry but it will get smoother by time) for at least 5-7 minutes, until it’s soft and elastic

  5. Wrap some plastic around and leave on bench for 30min

  6. Using a rolling pin roll the dough out as thin as possible, cut out small circles, place a tsp of filling in the middle, wrap it over like a dumpling and press the edges together with your fingers or a fork

  7. Cook in boiling water (with salt) for 3-4 minutes or until tender
