Vegetarian Ravioli Recipe
Ingredients
- 150g pizza/pasta flour
- 1/2 tsp salt
- 1 egg yolk
- 1 egg
- filling:
- 1/2 sweet potato
- 2 tsp green pesto
- parmasan cheese
- provence spices
- filling
- mash up sweet potato
- grate the parmasan cheese
Preparation
Mix it all up and leave filling in the fridge
Dough: on a baking mat/bench place the flour and create a recess in the middle, so it looks like a volcano
Add egg, yolk and salt in the middle and mix in the flour gradually by using a fork
Then use your hands to knead the dough (it might feel a little hard and dry but it will get smoother by time) for at least 5-7 minutes, until it’s soft and elastic
Wrap some plastic around and leave on bench for 30min
Using a rolling pin roll the dough out as thin as possible, cut out small circles, place a tsp of filling in the middle, wrap it over like a dumpling and press the edges together with your fingers or a fork
Cook in boiling water (with salt) for 3-4 minutes or until tender
